Mixed Berry Custard Tartlets

These tartlets are filled with Barker’s Professional Custard Flavoured Patisserie Crème and topped with a mix of fresh berries. Perfect for a sweet bite.

Ingredients
SWEET PASTRY
- 100 g Whipped cream
- 2 g Vanilla bean paste
- 15 g Icing sugar
- 200 g
Method
- Mix the Mixed Berry Custard Tarts ingredients together until thoroughly combined. Place into a piping with a medium round nozzle and refrigerate
- Roll the sweet pastry out to a 3-4mm thickness
- Line each 60mm straight edged tin with the sweet pastry, place in the refrigerator for at least half an hour
- Pre-heat the oven to 180˚C
- Remove tart shells from the refrigerator and blind bake for 15-20 minutes in the oven
- Allow to cool and pipe 18 grams of the Barker’s Custard Flavoured Patisserie crème mixture into the base of each tart
- Arrange approximately 40 grams of mixed berries on the top
- Finish with glaze or dusting sugar
