Ingredients
- 1 tbsp Pumpkin seeds
- 1 tbsp Sesame seeds
- 1 large Avocado
- Goats cheese feta
- Barker’s Professional Yuzu & Citrus Dressing
- pinch Salt
- Handful sliced spring onion
- 1 poached egg
- 1 slice sourdough toast
- garnish
- Lemon wedge
Method
- Lightly toast pumpkin and sesame seeds in a pan.
- Slice whole avocado into cubes and place in a bowl.
- Add in toasted seeds, Barker’s Professional Yuzu & Citrus Dressing, salt and spring onion. Mix well without breaking up the avocados too much.
- Place avocado mixture on toast with pieces of feta spread throughout.
- Top with poached egg and garnish with parsley and lemon wedge.
