Kumara & Mushroom Stroganoff

Kumara and Mushroom Stroganoff is a creamy, plant-based dish for four, made with sautéed mushrooms, red onion, garlic, and roasted kumara. Simmered in our Cream Style Meal Base with smoked paprika and balsamic vinegar, it's finished with fresh parsley for a rich, flavourful, and satisfying meal option.

Method
Method
- In a cast iron pan, heat the olive oil and add the mushrooms, onion and garlic. Sauté for 3 minutes.
- Add the water and Barker’s Professional Cream Style Meal Base. Bring to a quick simmer then add in the kumara, balsamic vinegar and parsley.
- Season and serve
HANDY HINT:
- Swap out the kumara for roast carrot and the mushrooms for roast capsicums.
