Lime Curd Cheesecake

Creamy cheesecake with a Barker’s Professional Lime Curd topping—this dessert is a refreshing way to end any meal.

Ingredients
- 1 packet
- 4 Tablespoons
FILLING
- 250 g Cream cheese
- 100 g
- 3 tablespoons Sugar
- 300 ml
- 2 tsp Gelatin
- Half a cup Boiling water
FILLING

Method
BASE
- Mix these to together and spread across base of a 9-inch square cake tin. Pat down with the back of a Tablespoon.
- Refrigerate for half an hour.
FILLING
- Add gelatin to half a cup of boiling water and stir until blended.
- Beat the first 4 ingredients together in a large bowl until all smooth. Add Gelatin mixture.
- Add beaten cream to mixture. When all folded in together pour into the tin on top of the base mixture.
TOPPING
- When cheesecake base and filling is set, spread 100g more of the Lime curd evenly over top
