Green Vegetable Quiche

Serves 8 people

35-45 min cook

Packed with greens and wrapped in a buttery crust, this quiche is perfect for brunch, lunch, or dinner. Veggie lovers rejoice!

Ingredients

  • 500 g mixed green vegetables (chopped)
  • 150 g Grated cheese
  • 300 ml Coconut Cream
  • 200 ml eggs
  • 200 g Barker’s Professional Caramelised Onion Savoury Filling
  • Salt & pepper
  • Fresh parsley (optional)

Method

  1. Blanch the chopped vegetables.
  2. Place in a standard quiche tin lined with a shortcrust or flaky pastry.
  3. Sprinkle over the cheese.
  4. Mix the remaining ingredients and seasoning, and pour over the vegetables.
  5. Cook for approximately 40 minutes at 170°C fan bake or 190°C standard bake. Note: Cover the quiche with foil for the first 30 minutes to prevent the top vegetables from overcooking
  6. HANDY HINT: Top and serve with our Barker’s Professional Caramelised Onion Relish
