Fruit Mince Slice

This slice is packed with spiced fruit mince, making it a festive treat that’s great for the holidays!

Ingredients
- ½ cup
- ¼ cup Caster sugar
- ½ cup
- ½ cup Rolled oats
- 200 g Butter
- 1½ cups
- ¼ cup Flour
- ½ tsp Baking powder
- 2
- ½ cup Brown sugar
- 2 cups Desiccated coconut
Method
- Pre-heat the oven to 170°C.
- Place all dry ingredients for the base into a food processor. Cut the butter into the mixture. Press the base into a well-greased square cake tin and bake for 12 minutes or until golden in colour.
- Place the topping ingredients into a food processor and pulse until gently combined.
- Spread the pre-cooked base with Barker’s Professional Fruit Mince, then the topping. Return to the oven for a further 15 to 20 minutes.
- Leave to cool in the tin for a few minutes, then cut into 16 squares. Place on a wire rack to cool further.
