Fruit Mince Slice

Serves 16 people

This slice is packed with spiced fruit mince, making it a festive treat that’s great for the holidays!

Ingredients

  • ½ cup
  • ¼ cup Caster sugar
  • ½ cup
  • ½ cup Rolled oats
  • 200 g Butter
  • 1½ cups
  • ¼ cup Flour
  • ½ tsp Baking powder
  • 2
  • ½ cup Brown sugar
  • 2 cups Desiccated coconut

Method

  1. Pre-heat the oven to 170°C.
  2. Place all dry ingredients for the base into a food processor. Cut the butter into the mixture. Press the base into a well-greased square cake tin and bake for 12 minutes or until golden in colour.
  3. Place the topping ingredients into a food processor and pulse until gently combined.
  4. Spread the pre-cooked base with Barker’s Professional Fruit Mince, then the topping. Return to the oven for a further 15 to 20 minutes.
  5. Leave to cool in the tin for a few minutes, then cut into 16 squares. Place on a wire rack to cool further.
