Berry Fruit Mince Brownies

Ingredients

  • 200 g Butter
  • 3/4 cup cocoa powder
  • 4 eggs
  • 2 cups white sugar
  • 1 tsp Vanilla extract
  • 3/4 cup Plain flour
  • 1 tsp Baking powder
  • 200 g Chocolate chunks
  • 200 g Barker's Professional Berry Fruit Mince

Method

  1. Preheat the oven to 180 deg C and line a 20 centimetre baking tin with a greaseproof paper.
  2. Melt the butter and add to a bowl with cocoa. Mix together.
  3. Add the eggs one at a time and mix until smooth. Add the sugar and vanilla, and combine. Mix in the flour and baking powder. Add fruit and chocolate. Mix until just combined.
  4. Transfer the mixture to the baking tin and bake for 30 to 50 minutes, depending on how gooey you want the brownies.
