Berry Fruit and Coconut Slice

A deliciously rich slice featuring a buttery base topped with a golden coconut and berry fruit mince layer. Made with Barker’s Professional Berry Fruit Mince, this recipe yields 16 generous slices, perfect for cafés and bakeries looking to add a seasonal treat to their menu.

Ingredients

Base

  • 200 g Chilled Butter
  • 200 g Packed Brown Sugar
  • 350 g Standard Plain Flour

Topping

  • 400 g Packed Brown Sugar
  • 90 g Plain flour
  • 1 tsp Baking powder
  • 0 tsp Salt
  • 250 g Desiccated coconut
  • 4 Large Eggs
  • 1 tsp Vanilla essence
  • 599 g Barker's Professional Berry Fruit Mince

Method

  1. Cut the cold butter into pieces. Place into a food processor with the brown sugar and flour. Mix until the mixture is crumbly in texture. Press down evenly in a greased baking tin and bake for the 10 minutes at 160 deg C.
  2. Place all dry ingredients for the topping into a food processor and mix well. Add the eggs, vanilla and Barker's Professional Berry Fruit Mince and blend together until all combined. Do not over mix.
  3. Pour the mixture on top of the base and spread out evenly. Bake at 160 deg C for about 40 minutes or until the centre of the topping feels firm and evenly coloured.
  4. Cool thoroughly before cutting.
