Berry Fruit and Coconut Slice

Ingredients
Base
- 200 g Chilled Butter
- 200 g Packed Brown Sugar
- 350 g Standard Plain Flour
Topping
- 400 g Packed Brown Sugar
- 90 g Plain flour
- 1 tsp Baking powder
- 0 tsp Salt
- 250 g Desiccated coconut
- 4 Large Eggs
- 1 tsp Vanilla essence
- 599 g Barker's Professional Berry Fruit Mince
Method
- Cut the cold butter into pieces. Place into a food processor with the brown sugar and flour. Mix until the mixture is crumbly in texture. Press down evenly in a greased baking tin and bake for the 10 minutes at 160 deg C.
- Place all dry ingredients for the topping into a food processor and mix well. Add the eggs, vanilla and Barker's Professional Berry Fruit Mince and blend together until all combined. Do not over mix.
- Pour the mixture on top of the base and spread out evenly. Bake at 160 deg C for about 40 minutes or until the centre of the topping feels firm and evenly coloured.
- Cool thoroughly before cutting.
