Fruit Mince Scrolls
These festive delights are crafted to impress at holiday events, combining rich flavours and textures for a memorable treat. Perfect for catering or corporate gifts, they add a touch of elegance to any celebration.

Ingredients
- 3 cups Self-raising flour
- 2 tsp Caster sugar
- 50 g Butter
- 1 1/3 cups Milk
- 200 g Barker's Professional Fruit Mince
- 20 g Barker's Professional Apricot Glaze
- Icing sugar
- Water
Method
- Sift the flour and sugar into a large bowl, rub in the butter. Stir in the milk to make a soft, sticky dough. Turn the dough onto a floured surface, knead until smooth.
- Roll the dough to approximately 26cm x 36cm and spread with Barker’s Professional Fruit Mince.
- Roll the dough firmly from the longer side, like a Swiss roll. Cut the roll into 2cm slices. Place the slices cut side up onto a greased oven tray about 3cm apart. Bake in a hot oven for 15 minutes.
- Remove from the oven and brush with Barker’s Professional Ready Glaze. Leave to cool.
- Drizzle icing over the scrolls in a zig-zag motion.
- Tip: Use Berry Fruit Mince instead of traditional Fruit Mince or try any Berry Patisserie Filling. Finish with an Apricot Flavoured Glaze or Spiced Apricot Traditional Sauce for a festive touch.
