Thai Kumara Bake

This dish combines the sweet, earthy flavors of kumara with aromatic Thai spices, making it a delicious and hearty meal.

Ingredients
- 4 kumara, peeled and sliced lengthways
- 2 cloves garlic, chopped
- 1 onion, thinly sliced
- 4 rosemary leaves, chopped
- 300 ml Water
- 299 Barker’s Professional Thai Style Meal Base
- 9 smoked cheese slices
Method
- In a greased roasting pan, lay down and overlap the kumara slices.
- In a saucepan, bring the garlic, onion, rosemary, water and Barker’s Professional Thai Style Meal Base to a simmer.
- Pour the sauce over the kumar
- Place into a pre-heated 180°C oven and bake for 25 minutes.
- Remove from the oven, add the cheese slices and return for a further 7 minutes to gratinate.
HANDY HINTS:
- Roast garlic in its skin until soft and use this in place of raw garlic.
- Swap out smoked cheese for crumbled feta cheese and parmesan.
