Sweet Tomato Baked Fish

Delicate fish fillets baked with our Ananthoth Farm Tomato Relish that’s both tangy and comforting. Simple yet sophisticated—perfect for your dinner menu.

Ingredients

  • 2 sliced onions
  • 1-2 sliced red or orange capsicums
  • 4 white fish fillets of your choice
  • 3-4 Tbsp Anathoth Farm Tomato Relish
  • 1 tbsp Olive oil
  • to garnish fresh dill

Method

  1. Preheat oven to 200°C.
  2. In a pan, heat a tablespoon of olive oil and saute the onion and capsicums until soft.
  3. Add 2-3 tablespoons of Anathoth Farm Tomato Relish and stir to combine.
  4. Add fish fillets and turn to coat fish completely in the onion and pickle mixture.
  5. Place in an ovenproof dish and bake until the fish is cooked.
  6. Scatter with fresh dill and serve straight from the dish.
