Mango & Vanilla Bean Eclairs

Serves 15 eclairs people

The tropical flavour of mango will take your customers back to their island getaways and have them coming back for more.

Ingredients

  • 20 g Milk
  • 200 g Water
  • 1 g Salt
  • 300 g Butter
  • 380 g Plain flour
  • 650 g eggs (approx. 13)

MANGO & VANILLA BEAN CREAM

  • 250 g Barker’s Professional Mango & Vanilla Bean Fruit Silk
  • 180 g Cream cheese
  • 15 g Icing sugar
  • 150 g Whipped cream

Method

  1. Bring the milk, water, butter, and salt to the boil
  2. Add the sieved flour and cook out to form a roux
  3. Remove from the heat and place into a beater fitted with a paddle. Mix until it has cooled to blood temperature
  4. Add eggs gradually
  5. Bake at 165oC for approximately 35 minutes – leave to cool after baking
  6. While eclairs are baking and cooling, prepare the Mango & Vanilla Bean Cream: Soften the cream cheese then whisk in the icing sugar and Barker’s Professional Mango & Vanilla Bean Fruit Silk Whisk in the whipped cream
  7. Once cooled, pipe the Mango & Vanilla Bean Cream into the eclairs. Decorate as desired
