Ingredients
Base
- 250 g Plain Sweet Biscuit Crumbs
- 125 g Butter, melted
Cheesecake Mix:
- 500 g Cream cheese (softened)
- 500 g Coconut Cream
- 200 g Castor Sugar
- 2 Tbsp Lemon juice
- 1 cup Baker’s Professional Cherry Patisserie Filling
- 1 1/2 Tbsp Gelatine dissolved in ¼ cup water
Topping
- 1-2 cups Barker’s Professional Cherry Patisserie Filling
- 1-2 Tbsp Gelatine dissolved in ¼ cup water
Method
- Mix together and press over the base and sides of a 22cm spring form tin. Chill.
- Beat the softened cream cheese, cream and sugar together until smooth, then add the remaining ingredients. Pour into the base and chill.
- Mix together and pour over the top of the cheesecake. Chill for a minimum of 2 hours
