Prawn & Chickpea Fritters
Makes 25 fritters
Crispy, golden, and packed with flavour, these prawn & chickpea fritters are the new snack-time heroes! Light, fluffy, and perfect with a dollop of Barker’s Professional Mediterranean Vegetable Chutney.

Ingredients
Batter
- 225 ml Soda water
- 104 g chickpea flour
- 1/2 tsp Baking soda
- 1/4 tsp Smoked paprika
- Sea salt
Filling
- 1 Red onion, peeld and finely diced
- 1/4 cup Flat leaf parsley, chopped
- 600 g Prawn meat, chopped
- 1/2 cup Cooked, mashed chickpea
- 3 Egg white
Method
- To make the batter: in a bowl whisk the soda water into the chickpea flour. Add the baking soda, paprika and sea salt. Cover and refrigerate for 30 minutes.
- In a mixing bowl combine the onion, parsley, prawns and chickpeas. Stir into the batter. In an electric mixing bowl, whisk the egg whites until stiff peaks form then fold into the batter mixture
- Heat a skillet with olive oil, cook spoonfuls of batter on each side until golden. Drain on absorbent paper, season with extra sea salt flakes and lightly warmed Barker’s Professional Mediterranean Vegetable Chutney
Handy Hint
- Corn kernels can be added to the filling mixture.
