Christmas Puffs

Flaky pastry filled with tangy fruit mince, baked to golden perfection and glazed for a festive treat.

Ingredients
- 1 Packet Pre-rolled Puff Pastry Sheets, Defrosted
- 400 g Barker’s Professional Fruit Mince
- Zest of 1 lemon
- Barker’s Professional Apricot Ready-To-Use Glaze
Method
- Mix the Barker’s Professional Fruit Mince together with the zest of a lemon for a tangy flavour
- Cut the pastry into rounds of approximately 9 to 10 centimetres. Place a teaspoon of fruit mince in each round, place another round on top and press the edges together. Cut two thin slits in the top of each puff.
- Heat the Barker’s Professional Ready Glaze and brush over the top of each puff.
- Bake at 220°C for 12 to 15 minutes, until golden brown. Lightly dust with dusting sugar.
- HANDY HINT: Feel free to add a small amount of Barker’s Professional Blueberry Patisserie Filling to the fruit mince - or a touch of Barker’s Professional Butterscotch Topping, to create your own unique blend of fruit mince
