Christmas Puffs

Flaky pastry filled with tangy fruit mince, baked to golden perfection and glazed for a festive treat.

Ingredients

  • 1 Packet Pre-rolled Puff Pastry Sheets, Defrosted
  • 400 g Barker’s Professional Fruit Mince
  • Zest of 1 lemon
  • Barker’s Professional Apricot Ready-To-Use Glaze

Method

  1. Mix the Barker’s Professional Fruit Mince together with the zest of a lemon for a tangy flavour
  2. Cut the pastry into rounds of approximately 9 to 10 centimetres. Place a teaspoon of fruit mince in each round, place another round on top and press the edges together. Cut two thin slits in the top of each puff.
  3. Heat the Barker’s Professional Ready Glaze and brush over the top of each puff.
  4. Bake at 220°C for 12 to 15 minutes, until golden brown. Lightly dust with dusting sugar.
  5. HANDY HINT: Feel free to add a small amount of Barker’s Professional Blueberry Patisserie Filling to the fruit mince - or a touch of Barker’s Professional Butterscotch Topping, to create your own unique blend of fruit mince
