Thai Pumpkin Soup

Ingredients

  • 30 ml Vegetable oil
  • ½ diced Onion
  • 1 clove clove garlic, chopped
  • 1 tbsp Grated ginger
  • ½ Tbsp chopped lemongrass
  • 600 g g pumpkin, diced
  • 325 ml Coconut milk
  • 400 Barker’s Professional Thai Style Meal Base
  • ½ Tbsp Fish sauce
  • limes, juiced
  • 30 chopped coriander

Method

  1. In a saucepan heat the oil until hot.
  2. Add the onion, garlic, ginger and lemongrass and lightly fry for 2 minutes.
  3. Add the pumpkin, coconut milk and Barker’s Professional Thai Style Meal Base.
  4. Bring to the boil and simmer for 25 minutes.
  5. Using a stick blender, blitz the soup until smooth.
  6. Blitz in the fish sauce, lime juice and coriander until smooth.
