Ingredients
- 30 ml Vegetable oil
- ½ diced Onion
- 1 clove clove garlic, chopped
- 1 tbsp Grated ginger
- ½ Tbsp chopped lemongrass
- 600 g g pumpkin, diced
- 325 ml Coconut milk
- 400 Barker’s Professional Thai Style Meal Base
- ½ Tbsp Fish sauce
- 1½ limes, juiced
- 30 chopped coriander
Method
- In a saucepan heat the oil until hot.
- Add the onion, garlic, ginger and lemongrass and lightly fry for 2 minutes.
- Add the pumpkin, coconut milk and Barker’s Professional Thai Style Meal Base.
- Bring to the boil and simmer for 25 minutes.
- Using a stick blender, blitz the soup until smooth.
- Blitz in the fish sauce, lime juice and coriander until smooth.
