A simple yet delicious Sweet & Sour Fish Bake, an easy switch from your classic Sweet & Sour Chicken recipe, on the table in 30 minutes!

Ingredients

Method

  1. Preheat oven to 180ºC fan bake. Place fish in a large oven-safe dish, season with salt and pepper and drizzle with oil.
  2. Microwave capsicum, carrot and corn, if using, for 1 1/2 minutes, to soften a little. Arrange on top of fish. Add pineapple pieces. Pour Barker’s Sweet and Sour Meal Sauce over the top.
  3. Bake for 20 minutes, until fish is cooked through and veggies are tender. Serve on rice or with crusty fresh bread. Garnish with spring onions.

Tips

  1. Fish could be swapped for raw prawn cutlets.
