Ingredients
- 250 g pumpkin, diced
- 250 g Kumara, diced
- 250 g carrots, diced
- 250 g parsnip, diced
- 25 g Sunflower seeds
- 25 g Pumpkin seeds
- 25 g Pine nuts
- 100 g Baby spinach
- 100 g cherry tomatoes, halved
- 30 g sliced, red onion
- 125 ml Barker's Professional Mustard & Herb Dressing
Method
- Roast the pumpkin, kumara, carrot and parsnip. Leave to cool down slightly.
- In a pan, toast the sunflower seeds, pumpkin seeds and pine nuts. Leave to cool.
- Toss all ingredients together with Barker's Professional Mustard & Herb Dressing.
