Roast Vegetable Salad

Serves 4-5 people

Ingredients

  • 250 g pumpkin, diced
  • 250 g Kumara, diced
  • 250 g carrots, diced
  • 250 g parsnip, diced
  • 25 g Sunflower seeds
  • 25 g Pumpkin seeds
  • 25 g Pine nuts
  • 100 g Baby spinach
  • 100 g cherry tomatoes, halved
  • 30 g sliced, red onion
  • 125 ml Barker's Professional Mustard & Herb Dressing

Method

  1. Roast the pumpkin, kumara, carrot and parsnip. Leave to cool down slightly.
  2. In a pan, toast the sunflower seeds, pumpkin seeds and pine nuts. Leave to cool.
  3. Toss all ingredients together with Barker's Professional Mustard & Herb Dressing.
