Mediterranean Pasta Salad
The combination of perfectly cooked pasta, sweet and tangy tomatoes, and the aromatic freshness of parsley, all brought together by the rich and savoury chutney, creates a delightful medley of flavours. This salad is not only delicious but also visually appealing, making it a perfect addition to any menu.

Ingredients
- 1 kg Reggia Penne Pasta
 - 300 g Cherry tomatoes
 - 49 g Chopped Italian Parsley
 - salt and pepper
 - 300 g Barker's Professional Mediterranean Vegetable Chutney
 - 30 ml Olive oil
 
Method
- Blanch pasta for 12 to 15 minutes until al dente. Drain and cool, toss with olive oil.
 - Place cooled pasta in a large bowl and mix through Barker’s Professional Mediterranean Vegetable Chutney, three quarters of the cherry tomatoes cut in half and parsley, reserving a quarter for garnish. Add salt and pepper to taste.
 - Pour contents into a serving container and garnish with remaining parsley and cherry tomato.
