Celebrate the festive season with a vibrant Broccoli, Cranberry & Walnut Mixed Grain Rice Salad – a perfect blend of holiday colors and flavors!

Ingredients
- 220 g Brown rice
- 25 g Quinoa
- Boiling water
- 98 g Barker's Professional Cranberry Savoury Jelly
- 40 g Dried Cranberries
- 250 g Broccoli Florets (just cooked, then cooled in ice bath
- 80 g Walnuts, roasted
- 25 g Sliced almonds, lightly roasted
- 1/2 orange, peeled and cut into 7 cm pieces
Method
- Bring the water to the boil, add the brown rice and quinoa, then simmer together for 20 minutes. Cool, then place into a bowl along with the Barker's Professional Cranberry Savoury Jelly and the dried cranberries. Mix until combined.
- Add most of the remaining ingredients, leaving a small amount for garnishing. Lightly fold in until evenly combined.
- Transfer into a serving dish. Garnish with the remaining broccoli, walnuts, almonds and orange pieces sprinked over the top. You can also add more dollops of cranberry jelly.
- HINT: Barker’s Professional Traditional Cranberry Sauce can be used instead of Barker’s Professional Cranberry Savoury Jelly.
