Ingredients
- 3 kg Baby potatoes
- 50 g Parsley, chopped
- 3/4 cup of mayonnaise
- 300 g Barker's Professional Caramelised Onion Relish
- Salt and pepper
Method
- Boil potatoes in salted water until tender, or roast, then cool.
- Cut potatoes into a half or a third depending on size.
- Place all ingredients in a bowl reserving a small amount of parsley for garnish. Present in a serving dish and sprinkle with remaining parsley.
