Caramelised Onion Potato Salad

Ingredients

  • 3 kg Baby potatoes
  • 50 g Parsley, chopped
  • 3/4 cup of mayonnaise
  • 300 g Barker's Professional Caramelised Onion Relish
  • Salt and pepper

Method

  1. Boil potatoes in salted water until tender, or roast, then cool.
  2. Cut potatoes into a half or a third depending on size.
  3. Place all ingredients in a bowl reserving a small amount of parsley for garnish. Present in a serving dish and sprinkle with remaining parsley.
