Raspberry Dragonfruit Meringue Roulade

A soft coconut meringue roulade filled with vibrant Raspberry Dragonfruit for a fresh, fruity finish.

Ingredients

  • 3 Eggs, separated
  • 1 Tbsp Shredded coconut
  • 3/4 cup sugar
  • Barker's Professional Raspberry Dragonfruit Filling

Method

  1. Line a sponge roll tin with baking paper.
  2. Beat the egg whites until stiff then slowly add the sugar. Beat for 5 minutes.
  3. Spread on the prepared tin and sprinkle with coconut. Bake at 135°C for 25 minutes.
  4. Remove from the oven and leave to set for 5 minutes. Turn out onto a tea towel.
  5. Spread with Barker’s Professional Raspberry Dragonfruit Filling and roll.
  6. Chill.
