Lemon Chicken with Noodles

Lemon Chicken with Noodles is a tasty dish featuring crispy chicken served over noodles or rice. It’s topped with our lemon meal sauce and garnished with spring onions or chives for a fresh finish.

Ingredients

  • 300 g Cooked noodles or rice

Chicken Batter

  • 250-300 g Tenderloin Chicken
  • 60 g Cornflour
  • 30 g Flour
  • 4 g (1 tsp) g Chicken stock
  • 1 Egg white, beaten
  • 30 ml (2 tsp) Water

Sauce

  • 140 g Barker’s Professional Lemon Meal Sauce
  • 14 ml Water
  • 6 ml Chinese Cooking Wine (optional) or with more water
  • 1/2 tsp Lemon zest (optional)
  • 1 Spring onion or chives

Method

  1. Heat a deep fryer until hot (or heat oil in a pot up to 180°C). While this is heating, whisk together the egg white and water in a bowl, until it goes fluffy.
  2. In a second bowl, mix the cornflour, flour and chicken stock until all combined.
  3. Dip the chicken pieces into the first bowl and coat with the egg white mixture. Transfer to the second bowl and coat with the flour mixture. Deep fry the chicken until cooked and golden. Place on a plate with a paper towel.
  4. Place the sauce ingredients in a pot and bring to the boil. Remove from the heat, add the spring onions or chives.

To Serve

  1. Stack the crispy chicken on the noodles and pour over the lemon sauce.
