Lemon &/or Blueberry Melting Moments

Delicate shortbread-style biscuits sandwiched with smooth Barker’s Professional Blueberry Flavoured Crème Filling.

Yeilds: 25 Melting Moments (at 40 grams per biscuit)

Ingredients

  • 350 g Butter
  • 160 g Icing sugar
  • 15 g Zest of two lemons
  • 450 g Plain all-purpose flour
  • 35 g Custard powder
  • 500 g Barker's Professional Lemon Creme Filling or Barker's Professional Blueberry Flavoured Creme Filling

Method

  1. Preheat the oven to 160 degrees Celsius. Line a tray with baking paper.
  2. Using a mixer fitted with a paddle, cream the butter and icing sugar together, adding the lemon zest towards the end.
  3. Fold in the sifted flour and custard powder. Mix until combined.
  4. Weigh the biscuit dough into 20-gram balls. Place the balls on the baking tray and press down lightly with your fingers or a fork.
  5. Bake for 12 to 15 minutes, or until firm and just coloured.
  6. Once cooled completely, sandwich two biscuits together with 20 grams of Barker's Professional Lemon Creme Filling or Barker's Professional Blueberry Flavoured Creme Filling.
