Mango Peach Penny Roll

A sweet swirl of sunshine! This Mango Peach Penny Roll wraps soft sponge around our mango and peach filling, fruity, fluffy, and perfect for a cheerful treat.

Ingredients

  • 600 g Pre-made sponge mix
  • 300 g Barker’s Professional Mango Peach Crème Filling
  • 278 g soft icing

Method

  1. Deposit 600 grams of pre-made sponge mix into a lined baking tray. Spread out evenly.
  2. Bake at 240°C for approximately 5 to 6 minutes.
  3. Once baked, tip on to baking paper sprinkled with caster sugar and peel off the paper from the top of the sponge sheet
  4. Cut into 4 equal rectangles (similar to a window).
  5. Spread 75 grams of Barker’s Professional Mango Peach Crème Filling on top of each rectangle. Spread evenly.
  6. Roll up as you would with a traditional Swiss roll. Allow to cool on the paper
  7. When cool, cut each rectangular roll in half. You should have 8 individual penny rolls.
  8. Using a tear-drop nozzle, pipe 35 grams of soft icing down the length of each penny roll. Finish with small dots of Barker’s Professional Mango Peach Crème Filling and some dried mango cut into thin strips.
