Chocolate Chip & Toffee Crème Gourmet Muffins

Indulgent and irresistible, these gourmet muffins are perfectly moist and packed with flavour, thanks to our luscious toffee crème filling. They’re ideal for elevating your café cabinet or dessert offering.

Ingredients
Base Muffin Batter
- 200 g Water
- 900 g Creme cake muffin mix
- 239 g Egg pulp
- 315 g Canola oil
- 135 g Barker's Professional Toffee Flavoured Creme Filling
- 135 g Chocolate Chips
- 240 g Barker's Professional Toffee Flavoured Creme Filling
Method
- Place the water, oil and egg pulp into a mixer fitted with a beater/paddle. Add the muffin mix and mix for 30 seconds on first speed.
- Scrape down the bowl, then mix for another 1 to 2 minutes on second speed.
- Add the chocolate chips and the first measure of Barker’s Professional Toffee Flavoured Crème Filling. Deposit 160 grams into pre-lined muffin tins.
- Pipe 20 grams of the second measure of Barker’s Professional Toffee Flavoured Crème Filling into the centre of each muffin.
- Bake at 175 degree C for approximately 30 minutes.
Finishing
- Using a piping bag fitted with a medium round nozzle, pipe 45 grams of chocolate icing in a circular motion on top of each muffin. Place 2 grams of chocolate buds around the icing and top with a Jersey Caramel lolly (4 grams).
