Ingredients
- 2 Pre-baked sponges
- 225 g Barker’s Professional Raspberry Patisserie Filling
- 360 g Fresh cream, whipped
Method
- Trim the tops of both sponges, then cut each sponge in half, horizontally.
- Pipe 75 grams of Barkers Professional Raspberry Patisserie Filling over one disc. Spread to the edge using a pallet knife
- Pipe 120 grams of whipped cream over this, spreading to the edge with a pallet knife.
- Top with a second sponge disc and repeat the process, twice. Dust with dusting sugar and decorate with Christmas decorations.
- HINT: Use mock cream instead of fresh cream to extend the shelf life of the cake.
