Christmas Layered Sponge Cake

Indulge in holiday magic with our Christmas Layered Sponge Cake! Fluffy sponge layers, whipped cream, Barker’s Professional Raspberry Patisserie filling and festive buttercream make this cake a showstopper.

Ingredients

  • 2 Pre-baked sponges
  • 225 g Barker’s Professional Raspberry Patisserie Filling
  • 360 g Fresh cream, whipped

Method

  1. Trim the tops of both sponges, then cut each sponge in half, horizontally.
  2. Pipe 75 grams of Barkers Professional Raspberry Patisserie Filling over one disc. Spread to the edge using a pallet knife
  3. Pipe 120 grams of whipped cream over this, spreading to the edge with a pallet knife.
  4. Top with a second sponge disc and repeat the process, twice. Dust with dusting sugar and decorate with Christmas decorations.
  5. HINT: Use mock cream instead of fresh cream to extend the shelf life of the cake.
