Avocado & Chipotle Cream Cheese Wrap

Ingredients
- 2 Avocado
- 2 Lemon juice
- 50 ml Herb Olive Oil
- 50 g Anchor Cream Cheese
- 13 Barker’s Professional Mexican Chipotle Hot & Spicy Sauce
- 1 Granny Smith Apple (Finely Chopped)
- 1 Handful Handful Of Edamame Beans (Frozen Peeled)
- ¼ Green Cabbage (Finely Chopped)
- 2 Spinach Wraps
- 30 g Mainland Special Reserve Creamy Feta (Crumbled)
- 1 Handful Baby spinach
- To Taste Salt and pepper
- 1 Coriander
Method
- Smash the avocado with half the lemon juice and half the herb oil and season to taste.
- Mix the Barker’s Professional Mexican Chipotle Hot & Spicy Sauce with the cream cheese until smooth.
- Combine the chopped apple, edamame beans, cabbage, chopped coraiander, remaining lemon juice and herb oil.
- Lay the wraps on the bench and spread the chipotle cream cheese evenly between the wraps.
- Spread the avocado between the wraps leaving a five-centimetre gap from the sides.
- Sprinkle the feta between the wraps leaving the same gap.
- Spread the spinach over the wraps followed by the apple slaw. Season to taste.
- Fold up one end of the wrap quarter of the way and then roll from the other side tightly to form a wrap. Cut in half and slice off the excess ends at the top. Wrap tightly in paper tied off with string or a sticky label.
