Marcel's & Barker's Fruity Pancake Stack

Enjoy Barker’s Professional deliciously fruity Peach, Mango & Passionfruit Compote with creamy mascarpone, generously layered on Marcel’s soft, fluffy pancakes. Topped with in-season fresh fruit and mint leaves, it’s a quick, easy, and impressively satisfying breakfast or dessert.

Ingredients
- ½ cup Mascarpone
- 1/2 cup Barker’s Professional Peach, Mango & Passionfruit Compote
- 1 Packet Marcel’s Happy Pancakes
- Handful Raspberries
- Handful blueberries
- Mint leaves to garnish
Method
- Put the mascarpone and compote into a small bowl and mix well to combine. Arrange a pancake in the centre of two plates.
- Top these pancakes with the compote mixture.
- Repeat this two more times until you have a stack of three pancakes with the compote mixture also on the top layer.
- Drizzle a little extra compote over the top of the stack then arrange the fruit on top followed by some mint leaves if desired.
- Serve immediately.
