Marcel's & Barker's Fruity Pancake Stack

There’s nothing quite like a collab, and we think this one is extra special! Enjoy Barker’s Professional deliciously fruity Peach, Mango & Passionfruit Compote with creamy mascarpone, generously layered on Marcel’s soft, fluffy pancakes. Topped with in-season fresh fruit and mint leaves, it’s a quick, easy, and impressively satisfying breakfast or dessert.

Ingredients

  • ½ cup Mascarpone
  • 1/2 cup Barker’s Professional Peach, Mango & Passionfruit Compote
  • 1 Packet Marcel’s Happy Pancakes
  • Handful Raspberries
  • Handful blueberries
  • Mint leaves to garnish

Method

  1. Put the mascarpone and compote into a small bowl and mix well to combine. Arrange a pancake in the centre of two plates.
  2. Top these pancakes with the compote mixture.
  3. Repeat this two more times until you have a stack of three pancakes with the compote mixture also on the top layer.
  4. Drizzle a little extra compote over the top of the stack then arrange the fruit on top followed by some mint leaves if desired.
  5. Serve immediately.
