Malay Curry Noodle Soup

The most glorious Malay Curry Noodle Soup with Barker's Professional Malay Curry Meal Sauce. This could be your new winter warmer which can also serve as a comfort food with dumplings and egg noodles to compliment the warm flavours.

Ingredients
- 3 Dumplings (pre-cooked or frozen)
- 1/2 Bok choy, halved or chopped
- 1/2 cup Coconut milk
- 1/2 cup Water or light vegetable/chicken stock
- 1/2 Packet Instant or fresh egg noodles
- 2 tablespoons Barker's Professional Malay Curry Meal Sauce
- A sprinkle of fried onions
- Salt or soy sauce to taste
Method
- In a small pot, combine the coconut milk, water (or stock), and Barker’s Professional Malay Curry Meal Sauce. Bring to a gentle simmer over medium heat.
- Once simmering, add the dumplings directly into the broth. If using frozen dumplings, simmer for 5-6 minutes or until fully heated through.
- Add the bok choy and cook for 2 -3 minutes until just tender but still vibrant.
- Add the egg noodles and cook according to package instructions (usually 1-2 minutes if fresh).
- Taste and adjust seasoning with a pinch of salt or a dash of soy sauce if needed.
- Transfer everything into a bowl. Pour the broth over.
- Sprinkle with fried onions before serving. Enjoy while hot!
