Malay Curry Noodle Soup

The most glorious Malay Curry Noodle Soup with Barker's Professional Malay Curry Meal Sauce. This could be your new winter warmer which can also serve as a comfort food with dumplings and egg noodles to compliment the warm flavours.

Ingredients

  • 3 Dumplings (pre-cooked or frozen)
  • 1/2 Bok choy, halved or chopped
  • 1/2 cup Coconut milk
  • 1/2 cup Water or light vegetable/chicken stock
  • 1/2 Packet Instant or fresh egg noodles
  • 2 tablespoons Barker's Professional Malay Curry Meal Sauce
  • A sprinkle of fried onions
  • Salt or soy sauce to taste

Method

  1. In a small pot, combine the coconut milk, water (or stock), and Barker’s Professional Malay Curry Meal Sauce. Bring to a gentle simmer over medium heat.
  2. Once simmering, add the dumplings directly into the broth. If using frozen dumplings, simmer for 5-6 minutes or until fully heated through.
  3. Add the bok choy and cook for 2 -3 minutes until just tender but still vibrant.
  4. Add the egg noodles and cook according to package instructions (usually 1-2 minutes if fresh).
  5. Taste and adjust seasoning with a pinch of salt or a dash of soy sauce if needed.
  6. Transfer everything into a bowl. Pour the broth over.
  7. Sprinkle with fried onions before serving. Enjoy while hot!
