Malay Curry Pasta Salad

Ingredients

  • 1 cup Cooked Penne Rigate Pasta(Cooled)
  • 1/2 cup Cherry Tomatoes or Diced Fresh Tomato
  • 1/2 cup Diced cucumber
  • 2 tablespoons Barker's Professional Malay Curry Meal Sauce
  • 1 tablespoons Olive oil
  • Salt and pepper
  • Fresh Herbs

Method

  1. In a small bowl, whisk together the Barker’s Malay Curry Meal Sauce and olive oil (if using) to create a creamy dressing.
  2. In a larger bowl, combine the cooked and cooled penne rigate pasta, diced tomatoes, and cucumber.
  3. Pour the dressing over the pasta and vegetables. Toss gently to coat everything evenly.
  4. Season with salt and pepper to taste.
  5. Chill in the fridge for 15–30 minutes before serving for best flavour.
  6. Garnish with fresh herbs if desired. Serve cold or at room temperature.
