Malay Curry Pasta Salad

Ingredients
- 1 cup Cooked Penne Rigate Pasta(Cooled)
- 1/2 cup Cherry Tomatoes or Diced Fresh Tomato
- 1/2 cup Diced cucumber
- 2 tablespoons Barker's Professional Malay Curry Meal Sauce
- 1 tablespoons Olive oil
- Salt and pepper
- Fresh Herbs
Method
- In a small bowl, whisk together the Barker’s Malay Curry Meal Sauce and olive oil (if using) to create a creamy dressing.
- In a larger bowl, combine the cooked and cooled penne rigate pasta, diced tomatoes, and cucumber.
- Pour the dressing over the pasta and vegetables. Toss gently to coat everything evenly.
- Season with salt and pepper to taste.
- Chill in the fridge for 15–30 minutes before serving for best flavour.
- Garnish with fresh herbs if desired. Serve cold or at room temperature.
