Creamy Pesto Pasta with Peas & Bacon

Our Creamy Meal Base is the perfect base for a pesto pasta and makes a quick and easy meal for any menu. Serve it with just peas for a vegetarian option or add in the bacon for extra flavour and texture.

Ingredients
- 150 g Streaky bacon, thinly sliced
- 1 cup packed basil, plus extra to garnish
- 1 cup packed parsley
- 1 cup Cashews
- 1 large clove garlic
- 30 g parmesan cheese, plus extra to serve
- ¼ cup olive oil
- 1 cup Cream Style Meal Base
- 1 cup frozen baby peas
- 1/3 to 1/2 cup pasta water
- 400 g pasta, cooked as per packet instructions
Method
- In a heavy-bottomed frying pan over a medium-high heat fry the bacon for several minutes.
- While the bacon is cooking put the basil, parsley, cashews, garlic, parmesan cheese and olive oil into a food processor, season with freshly ground black pepper and process until it still retains a bit of texture.
- Add this to the pan along with the Cream Style Meal Base, peas (retain a few peas to garnish) and enough pasta water to create a smooth sauce.
- Season to taste then add the pasta into the pan and mix well before dividing between four plates.
- Garnish with some extra parmesan cheese, herbs and peas then serve.
