Blueberry & Apple Cobbler

Blueberry & Apple Cobbler is a warm, comforting dessert made with Barker’s Professional Blueberry Patisserie Filling and fresh apples, topped with a sweet, crumbly cobbler dough. Baked until golden, it’s perfect served with whipped cream or ice cream. A fruity, rustic treat for any occasion.

Ingredients

Blueberry/Apple Mixture

  • 500 g Barker’s Professional Blueberry Patisserie Filling
  • 500 g Apple diced (or sliced)

Cobbler Dough

  • 140 g Flour
  • 95 g Castor Sugar
  • 10 g Baking powder
  • Pinch of Salt
  • 100 g Butter diced, chilled
  • 1 Egg yolk
  • 1/2 cup Buttermilk

Method

  1. Mix together Barker's Professional Blueberry Patisserie Filling and the apple. Place in a baking dish, filling to three-quarters full.
  2. Mix together the flour, castor sugar, baking powder and salt. Add the butter and mix until it is crumbly. Lastly add the egg yolks and buttermilk. The dough should be quite sticky and lumpy.
  3. Dollop spoonfuls of the cobbler dough over the blueberry and apple mixture. Lightly sprinkle with castor sugar.
  4. Bake at 180°C for approximately 30 minutes or until golden brown in colour.
  5. Serve with whipped cream or ice cream.
