Chicken& Chickpea Saagwala Lasagne

Serves 4

Ingredients

• 10g oil

• 10g garlic, crushed

• 50g onion

• 250g cooked chicken, small diced

• 300g chickpeas (drained from 400g can)

•  70g cheese (blend Parmesan/Colby)

•  20g feta

 Spinach Saagwala Mix (whisked together)        

• 425g Barker’s Professional Spinach Saagwala Meal Sauce

• 150g water

 White Sauce Mix (heated and whisked together)           

• 250g Barker’s Professional Cream Style Meal Base

•  175g water

Method

  1. Fry the onions in oil until soft. Add the cooked chicken and the chickpeas. Add the Spinach Saagwala Mix and combine all together. Season with salt and black pepper to taste.

  2. Layer In a deep dish (10 x 7 inch or 9 x 9 inch) starting with the chicken spinach/chickpea mix at the bottom. Add a lasagne sheet.

  3. Add chicken spinach/chickpea mix, white sauce mix and a lasagne sheet. Repeat with chicken spinach/chickpea mix, white sauce mix and lasagne sheet.

  4. Top with white sauce mix, cheese and crumbled feta. Garnish with chopped parsley (optional).

  5. Bake at 170°C for approximately 30 minutes.
