Shakshuka Scrolls
Serves 22 scrolls at approximately 100 grams people
These soft, golden shakshuka scrolls are packed with rich, spiced tomato flavour and layers of melted mozzarella. Perfectly portioned and irresistibly fluffy, they’re an easy, crowd-pleasing option for snacking, sharing, or adding a bold twist to everyday baking.

Ingredients
- 1 7/20 kg Plain white dough
- 350 g Barker's Professional Shakshuka Filling
- 220 g Grated Mozzarella
- 110 g Barker's Professional Shakshuka Filling
- 154 g Grated Mozzarella
Method
- Scale the dough into 1.350 kg heads, cover and leave to rest for 15 minutes on the bench.
- Using a rolling pin, roll the dough into a rectangle (68 centimetres by 38 centimetres).
- Spread Barker’s Professional Shakshuka Savoury Filling (1), evenly across the dough, leaving a small, clear strip at the base of the dough.
- Repeat with the grated cheese (1).
- Brush the clear strip at the bottom with water.
- Roll up like a swiss roll, making sure the lip of the roll is on the bottom.
- Cut into scrolls, approximately 3 centimetres wide.
- Prove for approximately 30 to 40 minutes.
- Remove from the prover and pipe 5 grams of Barker’s Professional Shakshuka Savoury Filling (2) on top and in the centre of each scroll.
- Top each scroll with 7 grams of grated cheese (2).
- Bake at 180°C for approximately 25 minutes.
