Delicately zesty and smooth, these Lemon Crème Flans feature our Lemon Creme Filling that add a refreshing twist to classic flan. Perfect for showcasing in dessert cabinets or as a premium plated offering.

Ingredients
- 2 kg sweet pastry
- 900 g Barker’s Professional Lemon Crème Filling
- 3 kg Muffin Batter
- 599 g Barker’s Professional Lemon Crème Filling
- 119 g White truffle
Method
- Push 200 grams of sweet pastry evenly into each pre-lined rectangular flan tin, trimming off excess pastry.
- Spread 90 grams of Barker’s Professional Lemon Crème Filling evenly over the pastry bases.
- Deposit 300 grams of muffin batter into each flan tin.
- Pipe 60 grams of Barker’s Professional Lemon Crème Filling in dots, into the top of the batter.
- Bake at 180°C in a conventional oven (or 175°C in a rotary oven) for 26 to 28 minutes.
- As they come out of the oven, glaze the top of each flan with a sugar solution.
- Once cool, using a paper piping bag, drizzle 12 grams of white truffle across the top of each flan.
