Beef Stroganoff

Serves 4

Ingredients

50ml Olive Oil

20 gm Butter, Diced

1 Onion, Diced

3 Cloves Garlic, Chopped

250 gm Button Mushrooms, Sliced

600 gm Beef Fillet 1.5cm Pieces

8 gm Sweet Paprika

50 ml Balsamic Vinegar

100 gm Barkers Professional Cream Style Meal Base

1 Lemon, Zested

40 ml Lemon Juice

15 ml Worcestershire Sauce

Sea Salt

Freshly Milled Black Pepper

Method

1. Heat the olive oil and butter in a cast iron pan. Add the onion and garlic and sauté for 3 minutes.

2. Add the mushrooms and cook for a further 4 minutes. Remove this into a mixing bowl and set aside.

3. Season the beef pieces with paprika and fry in the residual oil left in the pan.

4. Deglaze the pan with the balsamic vinegar.

5. Add the water and Barker’s Professional Cream Style Meal Sauce, bring to a quick simmer then add back in the mushroom mix, lemon zest and juice and Worcestershire sauce.

6. Season and serve.

Tips& Tricks

Reconstituted dehydrated mushrooms can be used, deglaze the pan with the mushroom liquid instead of the balsamic vinegar
