Blue Cheese & Caramelised Onion Savoury Muffins

12 Standard Muffins

Ingredients

  • 325 gm Self-Raising Flour

  • 2 gm Salt

  • 2gm White Pepper

  • 100 gm Tasty Cheddar Cheese, Grated

  • 100 gm Blue Vein Cheese, Crumbled

  • 35 gm Spinach (Finely Chopped)

  • 300 gm Barker’s Professional Caramelised Onion Breadshot Filling

  • 100 gm Eggs, Lightly Beaten

  • 28 gm Oil

  • 150 gm Milk

Method

  1. Pre-heat the oven to 190ºC.

  2. Sift the flour, salt and pepper into a large bowl.

  3. Add the two cheeses and spinach. Mix well.

  4. Marble the Barker’s Professional Caramelised Onion Breadshot Filling through the mix.

  5. Combine the eggs, oil and milk with the cheese and spinach mixture.

  6. Deposit 80 grams of batter into pre-lined muffin trays.

  7. Bake at 190ºC for approximately 16 to 20 minutes. Times will vary depending on your oven.

Tips & Tricks

Lightly spray the paper muffin cups with oil and the muffins will come out much easier after baking.
