Mediterranean Vegetable Sausage Rolls
Makes: 12 Standard or 24 Bite Size Sausage Rolls
Ingredients
450mm Flaky Pastry Roll 5kg 1kg
450 gm Sausage Meat
50 gm Egg
2 gm Salt
2 gm White Pepper
220 gm Barker’s Professional Mediterranean Vegetable Chutney
60 gm Breadcrumbs
25 gm Eggwash
3 gm Paprika
Method
Combine all the ingredients in a mixing bowl fitted with a paddle.
Mix on low speed for 1 minute.
Transfer meat into a piping bag fitted with a large, round, plastic piping nozzle.
Pipe a thick line of sausage meat across the pre-lined flaky pastry, taking care not to drag the meat.
Egg wash just below the line of the sausage meat.
Roll the pastry over the meat to form a sausage roll.
Gently score across the top. Brush with egg wash then sprinkle with paprika.
Cut into 3 centimetre lengths (approximately) and place rolls on an oven tray, making sure the seam is on the bottom.
Bake at 190ºC for approximately 22 minutes depending on the oven

Any Barker’s Professional Savoury Filling can be used in place of the Barker’s Professional Mediterranean Vegetable Chutney.
