Poke Bowl

Ingredients:

  • ½ cup rice

  • 2 The Cool Gardener Beetroot Patties

  • ¼ cup edamame beans

  • ¼ cup red cabbage, chopped

  • ¼ avocado, sliced

  • ½ small carrot, shaved with a peeler

  • ¼ cup sprouts

  • 1 tsp sesame seeds

  • 2 Tbsp Barker's Professional Farmstyle Plum & Tamarillo Chutney

Method:

  1. Preheat oven to 180°C and line a small baking tray with baking paper.

  2. Add rice and 1 cup water to a medium saucepan and follow the cooking instructions on the packet.

  3. Bake The Cool Gardener Beetroot Patties in the oven for 13 to 15 minutes then cut into cubes.

  4. Cook the edamame beans in a mug with 1 Tbsp water in a microwave for 2 minutes.

  5. Spoon the rice into a bowl and place the other ingredients on top.

  6. Serve with Barker's Professional Farmstyle Plum & Tamarillo Chutney.
