Goats Curd Fritters
Serves 4-6
Ingredients:
80 ml water
40 gm butter
50 gm flour
2 eggs
250 ml mashed baked potato
50 gm goats curd
250 ml Barker's Professional Spiced Apricot Sauce
Method:
In a saucepan, bring the water and butter to a boil.
Add the flour and with a wooden spoon, stir vigorously for two minutes until the flour is cooked and the mix pulls from the side of the pan.
Remove from the heat and stir out the excess. Heat for a minute then mix in the eggs.
Add the potato and goats curd, mixing well.
Fill a piping bag ready to be dispensed into the fryer.
Heat a deep fryer to 1750°C. Deep-fry until golden and trisp, then drain on a paper towel. Serve with Barker‘s Professional Spiced Apricot Sauce.
