Vegan Breakfast Roll

Ingredients:

  • 6 of The Cool Gardener Kumara Rosti

  • 1 Tbsp olive oil

  • 3 portobello mushrooms, sliced

  • 2 bread rolls

  • a handful of spinach

  • 1/2 an avocado

  • 2 tbsp Barker’s Professional Harissa Paste

Method:

  1. Preheat the oven to 180 degrees and line a small baking tray with baking paper.

  2. Bake The Cool Gardener Kumara Rosti for 10 to 12 minutes.

  3. Heat the olive oil in a fry pan and cook the mushroom slices until they start to brown.

  4. Fill the rolls with all of the ingredients.
