Vegan Breakfast Roll
Ingredients:
6 of The Cool Gardener Kumara Rosti
1 Tbsp olive oil
3 portobello mushrooms, sliced
2 bread rolls
a handful of spinach
1/2 an avocado
2 tbsp Barker’s Professional Harissa Paste
Method:
Preheat the oven to 180 degrees and line a small baking tray with baking paper.
Bake The Cool Gardener Kumara Rosti for 10 to 12 minutes.
Heat the olive oil in a fry pan and cook the mushroom slices until they start to brown.
Fill the rolls with all of the ingredients.
