Ingredients:

  • 600g Barker’s Professional Spicy Eggplant Pickle

  • 600g grated tasty cheese

  • 20 thick slices wholemeal or wholegrain bread

  • salad leaves for garnish

  • cherry tomato wedges (optional)

  • 200g Barker’s Professional Spicy Eggplant Pickle

Method:

  1. Mix the first measure of Barker’s Professional Spicy Eggplant Pickle and cheese together

  2. Spread on 10 slices of bread and top with another slice of bread

  3. Toast, grill or panfry

  4. Serve with a salad, tomato wedges and spoonful of Barker’s Professional Spicy Eggplant Pickle

Optional: Add a slice of ham to each sandwich
