Thai Pumpkin Soup
Serves 4
Ingredients:
30ml vegetable oil
½ onion, diced
1 clove garlic, chopped
1 tbsp grated ginger
½ tbsp chopped lemongrass
600g pumpkin, diced
325ml coconut milk
400g Barker’s Professional Thai Style Meal Base
½ tbsp fish sauce
1½ limes, juiced
30g chopped coriander
Method:
In a saucepan heat the oil until hot.
Add the onion, garlic, ginger and lemongrass and lightly fry for 2 minutes.
Add the pumpkin, coconut milk and Barker’s Professional Thai Style Meal Base.
Bring to the boil and simmer for 25 minutes.
Using a stick blender, blitz the soup until smooth.
Blitz in the fish sauce, lime juice and coriander until smooth.
