Thai Pumpkin Soup

Serves 4

Ingredients:

  • 30ml vegetable oil

  • ½ onion, diced

  • 1 clove garlic, chopped

  • 1 tbsp grated ginger

  • ½ tbsp chopped lemongrass

  • 600g pumpkin, diced

  • 325ml coconut milk

  • 400g Barker’s Professional Thai Style Meal Base

  • ½ tbsp fish sauce

  • 1½ limes, juiced

  • 30g chopped coriander

Method:

  1. In a saucepan heat the oil until hot.

  2. Add the onion, garlic, ginger and lemongrass and lightly fry for 2 minutes.

  3. Add the pumpkin, coconut milk and Barker’s Professional Thai Style Meal Base.

  4. Bring to the boil and simmer for 25 minutes.

  5. Using a stick blender, blitz the soup until smooth.

  6. Blitz in the fish sauce, lime juice and coriander until smooth.
