Method

  1. Place the butter, water and friand mix into a mixing bowl fitted with a whisk. Whisk on low speed for 1 minute. Scrape down. Whisk on top speed for 5 minutes.

  2. Deposit 60 grams into pre-greased friand tins.

  3. Pipe 10 grams of Barker’s Professional Lime Fruit Curd just below the surface.

  4. Bake in a conventional oven at 190°C or in a rotary oven at 185°C for 18 to 24 minutes. (Note: baking time and temperature may vary from oven to oven).

  5. As they come out of the oven, de-tin and allow to cool completely.

  6. Once cool, lightly dust with 2 grams of dusting sugar.

  7. Using a medium round nozzle, pipe 12 grams of Barker’s Professional Lime Fruit Curd icing in a squiggle across the top of the friand.
