Lime Curd Cheesecake
Ingredients
BASE
1 packet of super wine biscuits
4 Tablespoons of Butter melted
FILLING
250g Cream cheese
Juice of a lemon
100g Barker’s Professional Lime Curd
3 tablespoons of sugar
300ml cream Beaten until soft peaks form.
2 teaspoons of Gelatin
Half a cup of boiling water
TOPPING
100g Barker’s Professional Lime Curd
Method
BASE
Mix these to together and spread across base of a 9-inch square cake tin. Pat down with the back of a Tablespoon.
Refrigerate for half an hour.
FILLING
Add gelatin to half a cup of boiling water and stir until blended.
Beat the first 4 ingredients together in a large bowl until all smooth. Add Gelatin mixture.
Add beaten cream to mixture. When all folded in together pour into the tin on top of the base mixture.
TOPPING
When cheesecake base and filling is set, spread 100g more of the Lime curd evenly over top
