Butter Chicken Tofu
Serves 12
Ingredients:
80ml lemon juice
20g ground cumin
30g turmeric powder
4 packs firm tofu, drained and dried
sea salt flakes
freshly milled pepper
700ml Barker’s Professional Butter Chicken Meal Sauce
250ml water
6 spring onions, sliced
½ cup coriander leaves
Method:
In a container that will hold the tofu, stir together the lemon juice, cumin and turmeric.
Cut the tofu into cubes, coat in the liquid and allow to sit for at least an hour or overnight in the refrigerator.
In a saucepan, bring the Barker’s Professional Butter Chicken Meal Sauce and water to a simmer.
Add the tofu and it’s marinade.
Add the spring onions and cook gently for 5 minutes.
Fold in the coriander and serve.
