Avocado Sourdough Toast with Feta, Avocado & Beetroot

Take smashed avocado to the next level with this artisan breakfast recipe!

Ingredients:

  • 200g creamy feta cheese

  • 60ml cream cheese

  • 1 lemon - juice and zest

  • sprigs fresh thyme

  • 2 avocados

  • salt and pepper

  • 2 thick slices sourdough, toasted

  • 10g unsalted butter

  • Barker’s Professional Beetroot Relish

  • Radish - thinly sliced

  • Watercress

  • Edible flowers

Method:

  1. Whipped feta - combine feta, cream cheese, lemon juice, zest and thyme in a food processor.

  2. Smashed avocado - mash avocados, lemon, salt and pepper.

  3. Assemble - toast bread. Spread with unsalted butter and whipped feta. Then top with Barker’s Professional Beetroot Relish and smashed avocado. Garnish with thinly sliced radish, watercress and edible flowers.
