Makes 1 pizza
1 30cm pizza base
1 Tbsp chilli oil
1 cup Barker’s Professional Malay Curry Hot & Spicy Sauce
200g fresh mozzarella cheese, sliced
1 chicken breast, pre-cooked and sliced
(poaching leaves the meat moist)
200g cooked kumara, thinly sliced
To serve: coriander and flat leaf parsley
(optional) red chilli, sliced
Spread the chilli oil on the base leaving a 1cm border around the edge.
Spread on the Barker’s Professional Malay Curry Hot & Spicy Sauce.
Top with sliced mozzerella, then the chicken and kumara slices. Season with salt and pepper.
Place on stone and bake in a very hot pizza oven for 10 to 12 minutes.
Remove from the oven and sprinkle herbs and red chillis over the top. Dot spoonfuls of sour cream around the pizza to serve.
