Jamaican Jerk Chicken Drumsticks

Makes 20 drumsticks

Ingredients

20 chicken drumsticks
2 litres milk
3 litres water
750ml Barker’s Professional Jamaican Jerk Hot & Spicy Sauce

Method

Remove the ends of the drumsticks.

Place the milk, water and drumsticks into a saucepan and bring to the boil. Simmer for 20 minutes.

Place the Barker’s Professional Jamaican Jerk Hot & Spicy Sauce in a large mixing bowl, add the well drained drumsticks and coat in the marinade. Marinate for at least 4 hours or preferably overnight.

Drain excess jerk marinade and either grill over charcoal or wood, or in a pre-heated 185°C oven for 30 to 35 minutes until tender.

Using a pastry brush, glaze the drumsticks with more Barker’s Professional Jamaican Jerk Hot & Spicy Sauce.
